Pineapple Smoothie Recipe

The prickly-skinned but sweet and juicy pineapple – apparently so named because hundreds of years ago an explorer reckoned it looked liked a big old pine cone makes for a great smoothie.

This tropical fruit is a good source of vitamin C and fiber. Add to that they also contain manganese which is used by the bones and the brain.

Also in this Pineapple Smoothie Recipe are oranges. Citrus fruit – like oranges – are nutrition all-rounders, big stars in the fruit world. They’re rich in minerals, vitamin C and B, plus they’re a good source of folate and potassium, which can help preserve bone calcium. They also contain phytochemicals and the soluble type of fiber, which can help to lower cholesterol.

What you need:

  • 4 whole oranges – peeled and chopped
  • 2 cups of pineapple – skin removed and chopped into chunks
  • ¼ cup of fresh mint leaves
  •  ½ cup of water – plain or coconut (your preference)
  • 1 cup of ice

Serves two

Make this smoothie:

  1. Add the water into the blender, followed by the mint, fruit and lastly the ice.
  2. Blend for 30 seconds to a minute – depending on the power of your blender – until smooth. Remember to start at a slow speed, to get things moving, before slowly turning it up to full speed. If you have pre-programmed smoothie cycle on your blender use that instead.
  3. Now you are ready to pour and enjoy – yummo.

As always you can experiment – add a banana to make the smoothie a little creamy. You could also try it with chia seeds, cinnamon or maca powder.

Tips:

Pineapples are a tricky fruit to select. Go for one that is plump with a sweet aroma. Check the leaves at the top of the fruit, they should be fresh and green not brown and withered. Watch out for winkled skin and a spongy feel – not good signs.

Also just because a pineapple is green that doesn’t mean it’s not ripe – it depends on the variety. And once picked pineapple – unlike some fruit – don’t get any riper or sweeter.
