Avocado Apple Smoothie Recipe


This apple smoothie recipe mixes apple with not only avocado, but with all sorts of green goodness from the fruit and veggie family. Its a super delicious blend, and a great way, we reckon, to get a dose of vitamin and mineral goodness.

Apples are rich in carbohydrates, a good source of soluble fiber and have one of the highest antioxidant capacities of all fruits. Plus there are so many different varieties of apple, each with its own distinct flavor, making them a pretty special fruit.

Our recipe also includes spinach. This leafy green is rich in beta-carotene, which is converted to vitamin A by our bodies and needed for our immune system. Spinach is also rich in lutein and zeaxanthin – antioxidants which help to protect against age-related eye disorders.

Meanwhile, avocados are a good source of fiber, niacin – a B vitamin – and vitamin C. They also contain vitamin A, riboflavin – another B vitamin – and magnesium.

What you need:

  • 2 cups of coconut or filtered water
  • 1½ apples cored
  • 1 avocado
  • 2 cups of spinach

Serves two

Make this smoothie:

  1. Add the coconut water and greens to your blender. Blend for 30 seconds to minute – depending on the power of your blender – until smooth. Remember to start the blender off at a slow speed, to get things moving around, before slowly moving up to full speed.
  2. Turn off the blender and add the apple and avocado. If you don’t have a super powerful blender give it a little love and chop the apple into large chunks beforehand. Switch the blender back on and blend for 30 seconds to a minute until smooth and delicious looking. Of course if you have pre-programmed smoothie cycle on your blender use that instead.
  3. Pour and enjoy straight away.

Feel free to experiment with this recipe, adding other great ingredients you have in your kitchen – add a nut or coconut milk, instead of water. You could also try it with chia seeds, spirulina, or a pinch of cinnamon.

Tips:

Avocados can be tricky to pick. Look for an unblemished avocado which gives slightly when you press on the stem end. If you have unripe hard avocados at home, leave them out at room temperature to slowly ripen – don’t put them in the fridge.

Fresh is always best so if you can use whatever apples happen to be in season. There are so many fantastic varieties available most of the year round, though our hands down favorites would have to be the crispy tart flavoured Granny Smith and the crunchy sweet-tart Pink Lady. Delicious. When buying apples go for the firm unbruised fruit.
